I (Leesha) love chicken salad. I was getting ready to make some the other day and decided I'd share my recipe for the best ever chicken salad... At least in my (cook)book!
Here's what you need:
1 lb. chicken, cooked & shredded
1/4 c. almonds, chopped
You can buy almonds (or other nuts) pre-chopped or sliced, but I had whole almonds already. I like that there are some larger pieces, but you could continue chipping to your liking!
1 small apple, chopped
I used a Pink Lady Apple for the sweetness, but again, use what you like!
1/3 c. dried cranberries
2/3 c. grapes, sliced
Im showing the grapes on a tupperwear lid. Take two identical lids and put the grapes between them. Now, with a firm hand on the stack, slice with a knife! This makes slicing so simple and quick!!
1/2 c. red onion, chopped
I did have a picture of some finely chopped onion, but it disappeared. If you don't like onion, skip this step! BUT, if you do, this adds a great crunch.
So, here are my "add ins". These are ingredients that you can replace, add to, take away from... Basically, make it your own! Get creative.
1 T. lemon juice
1/2 t. garlic powder
salt & pepper to taste
1/2-1 c. Greek yogurt (or Mayo)
Mix everything together! It's that simple. I've been eating on this all week! It's great with crackers or on ciabatta bread... Or any kind of bread! Orrrr on a fork.
